This recipe for a stuffed green pepper is melt in your mouth full of flavor! Not only is this recipe delicious, but it is a healthy, well-rounded meal!! It contains 278 calories, 13 carbs, 8 g of fat, 36 g of protein and 7 g of fiber.
This meal is also perfectly acceptable on Medifast. It counts as 1 lean, 2 greens and 3 condiments. You can add tomatoes to make it a full lean and green meal, I just don’t like tomatoes.
Ingredients:
- 1 lb 99% ground turkey
- Two green peppers
- 2 cups steamed cauliflower
- 2 cups 2% reduced fat cheese
- reduced sodium taco seasoning
- 1/2 cup green chiles
- ground white pepper (optional)
Directions:
Preheat oven to 350º.
Brown ground turkey and add taco seasoning – prepare as directed.
Cut the top off and clean out the green peppers.
Steam 2 cups of cauliflower.
Take 1/2 of the fully cooked and seasoned ground turkey and put it into another pan. Add 1/2 can of green chiles, 2 cups of cheese and steamed cauliflower. This is where I added ground white pepper just because I looooooove the taste of it. I added about 2 tbsp. Mix until cheese melts.
Scoop 1/2 of mixture into each of the prepared green peppers. (Some recipes have you boil the green pepper first, but I like some crunch to this meal so I didn’t cook them first.) Sprinkle a bit of cheese over the top.
Bake for 20-30 minutes.

I will be making this!! I saw it when you posted it on Instagram and I didn’t realize that you made it! I thought that it was a pre-made meal from Medifast.
Do the green chilis make it hot and are they the ones in the little can in the aisle with all the other Mexican food?
LOL! Yes, the little can of diced chiles in the mexican food aisle. You can use hot or mild. Here in Colorado green chiles are big so we usually buy fresh roasted from the Chile Festival and freeze a bunch!
