Peach cobbler recipe

With peaches being in season I can’t get peaches off my mind so I tried to make a peach cobbler, but it came out more like peach cobbler with a cake on top!

Since the kids say it’s “awesome” and the pan was 3/4 gone less than an hour after it came out of the over I’m posting the recipe anyway!

Ingredients

    Cobbler filling:
  • 4 c peeled and sliced peaches
  • 3/4 c. brown sugar
  • 1 tsp cinnamon
  • 1 tsp vanilla
  • 1 tbsp flour
  • Cobbler crust:
  • 1 c. flour
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 3 tbsp brown sugar
  • 4 tbsp unsalted butter
  • 2/3 c buttermilk (Click here to make your own buttermilk)
  • t tbsp brown sugar

Directions

Preheat oven to 425 degrees.

Butter 1 1/2 quart shallow baking dish.

Lay sliced peaches into dish and sprinkle with cobbler filling ingredients.

Mix and spread evently.

Bake 10 minutes.

Combine dry cobbler crust ingredients in a bowl.

Cut in butter with a pastry cutter or your fingers to make a crumb texture.

Add buttermilk and stir to form a soft dough.

Remove peaches from oven and drop rounded spoonfuls of cobbler crust dough on top. Sprinkle with brown sugar.

Return to oven for about 20 minutes or until cobbler is bubbly and crust is golden brown.

How much brown sugar? 1 Tbsp? It indicates a “t.”
