Banana Bread Recipe

It’s been getting chilly here in Colorado, but I am not ready to turn on the heat so I’ve been doing a little baking.  It smells good, tastes good and warms the house too!

This recipe is really quick to prepare and is the best, most moist banana bread I have ever had.

Banana Bread Recipe

Ingredients:

  • Banana Bread Recipe8 oz cream cheese, softened
  • 1 cup of sugar
  • 1/4 cup of margarine
  • 1 cup of mashed banana (approx. 2 ripe bananas)
  • 2 eggs
  • 2 1/4 cup of flour
  • 1 1/2 tsp baking powder
  • 1/2 tsp baking soda
  • 1 cup of chopped nuts (OPTIONAL)

Directions:

  • Banana Bread RecipePreheat oven to 350°
  • Grease and flour a bread pan (9×5)
  • In a large bowl mix cream cheese, sugar and margarine.
  • Mix in banana and eggs until creamy.
  • Add all remaining ingredients.  Mix until thoroughly blended.
  • Pour mixture into bread pan
  • Bake for 60-70 minutes and until browned on top.
  • Tip: if browning starts early cover with a piece of foil to prevent further browning.

One of the loaves didn’t make it an hour!!!

I think it’s cool how the cream cheese keeps the bread from turning as brown in the middle as most banana breads are. I wonder why that is? But it looks delicious!
